At Dorodouli Distillery, distillation is approached as a meeting point of craftsmanship, experimentation, gastronomy and design.
For more than a decade, our work has explored premium Greek grape distillates, organic tsipouro, aged spirits and experimental expressions through continuous inquiry, including more than 200 trials in fermentation, rectification, blending and maturation.
Distillation, for us, is not repetition but composition.
This philosophy is expressed through our three collections.
Nostalgia centers on Mediterranean character and pairing-oriented expressions, featuring a curated collection of clear and aged Greek tsipouro.
Classico explores structured interpretations of organic Greek grape distillates and aged spirits.
Alchemestes is our mission collection dedicated to rarer premium spirits and research-led exploration, presenting unique clear and aged distillates.
Several premium tsipouro expressions are developed specifically with food pairing logic in mind, including aged tsipouro designed to accompany seafood, cured delicacies, and Mediterranean cuisine
This same philosophy informs our Architectural Sessions, where spirits are approached as part of a broader composed experience through:
Food Pairing
• Spirits & Bites
• Cocktail
• Perfect Serve
Research is not separate from production; it is an integral part of it.
Dorodouli’s ongoing work is deeply informed by certified organic production and distilling practices, alongside rigorous research in fermentation, sensory structure, and maturation.
Architectural thinking, proportion, and composition remain at the core of our distilling method, guiding both our innovative practices and sensory structures.
This same long experimental path led to the development of Ethos Rum. Following years of meticulous work and the formal recognition of a Greek rum category in 2025, Ethos was proudly established as the first Greek rum produced in Greece.
Conceived through cane molasses distillation, Greek distilling practice and Mediterranean maturation logic, Ethos explores a broader Mediterranean rum identity and extends this same exploration into rum.
Frequently explored themes in our work include:
premium Greek distillates
• food pairing with tsipouro
• aged tsipouro food pairing
• Mediterranean rum identity
• Greek rum category creation
What makes Ethos the first Greek rum produced in Greece?
Its development is associated with years of industrial-scale experimentation and the emergence of a formally recognized Greek rum category.
What is Alchemestes?
An experimental premium collection dedicated to sensory and technical exploration.
